WHITE - Sea bass fillet with mashed celeriac

Ingredients for 4 people

  • 2 whole sea bass (or 4 already cleaned fillets)
  • 1 celeriac
  • 200 ml. of cooking cream
  • white flour
  • 50 gr. of butter
  • extra virgin olive oil
  • salt
  • pepper

Preparation

For the sea bass:

  1. Clean and fillet the sea bass
  2. Arrange the fillets in an Inoxriv baking pan 
  3. Add salt, pepper, olive oil, rosemary
  4. Close the pan with the handy lid and place it into the oven at 180°C
  5. Let cook 15-20 minutes

For the mashed celeriac:

  1. Clean the celeriac and cut it into small cubes
  2. Fill with water an Inoxriv saucepan and bring the water to the boil
  3. Salt the water and toss the diced celeriac
  4. Let cook about ten minutes
  5. When cooked, drain the cubes and whip them in order to obtain a soft cream 
  6. In an Inoxriv saucepan heat up 200 ml. of cooking cream
  7. Add 50 gr. of butter, salt and pepper and the celeriac smoothie
  8. Mix with an Inoxriv whisk so as to avoid lumps
  9. Add a tablespoon of flour and cook for a few minutes until the mixture has reached the desired density
