For the pumpkin, potatoes and carrots cream:
- Clean the pumpkin and cut it into small cubes
- Do the same with the carrots and the potatoes
- Cut the onion and fry it with extra virgin olive oil in an Inoxriv frying pan
- When the onion gets golden add the diced pumpkin, the potatoes and the carrots
- Cook on a low heat for about 30 minutes, adding water if needed
- Add salt and pepper and a few rosemary leaves
At the end of the cooking whip everything until you obtain a smooth cream
For the pumpkin sticks:
- Cut the pumpkin into sticks
- Fill the Inoxriv fryer with seed oil until the bottom of the basket is entirely covered
- When the oil boils, toss the pumpkin sticks
- Move the basket, so that the sticks do not stick together
- When the sticks gets golden lift the basket and place it on the edge of the fryer in order to allow it to drain the excess oil
- Place the sticks on absorbent paper and salt to your taste
