ORANGE - Pumpkin, potatoes and carrots Cream with fried pumpkin sticks

Ingredients for 4 people

  • 1 medium size pumpkin 
  • 3 potatoes
  • 2 carrots
  • 1 onion
  • extra virgin olive oil
  • seed oil to fry
  • salt
  • pepper

Preparation

         For the pumpkin, potatoes and carrots cream:

  1. Clean the pumpkin and cut it into small cubes
  2. Do the same with the carrots and the potatoes
  3. Cut the onion and fry it with extra virgin olive oil in an Inoxriv frying pan 
  4. When the onion gets golden add the diced pumpkin, the potatoes and the carrots
  5. Cook on a low heat for about 30 minutes, adding water if needed
  6. Add salt and pepper and a few rosemary leaves
  7. At the end of the cooking whip everything until you obtain a smooth cream

     

    For the pumpkin sticks:

  1. Cut the pumpkin into sticks
  2. Fill the Inoxriv fryer with seed oil until the bottom of the basket is entirely covered
  3. When the oil boils, toss the pumpkin sticks
  4. Move the basket, so that the sticks do not stick together
  5. When the sticks gets golden lift the basket and place it on the edge of the fryer in order to allow it to drain the excess oil
  6. Place the sticks on absorbent paper and salt to your taste
